Olive cultivation has been part of Morocco’s agricultural scene since the Roman era, Morocco is now the world’s sixth largest producer of olive oil, but the quality and compositional peculiarities of Moroccan Olive oil vary greatly. We offer picholine extra virgin olive oil produced in the Essaouira region, the most common variety of olive used for oil in Morocco. Originally from the region of Gard in southern France. The olive’s are harvested by hand, an early harvest gives a fruity taste, while a later harvest brings more sweetness. 


Extraction is key to the production process. Hand harvested in late October or early November, the olives never touch the ground. They are then cold pressed, this allows the oil to preserve all of the nutritional and original qualities of the oil. Atlassence quality Olive Oil is the most premium produced in Morocco. The health benefits of Olive Oil have always been controversial but experts agree that extra virgin oil is good for you. The predominant fatty acid in olive is monounsaturated fat called oleic acid, making up about 73% of the total oil content. Studies show that oleic acid reduces inflammation. The high content of monounsaturated fats are resistant to high heat, making extra virgin olive oil a healthy choice for cooking.


Extra virgin olive oil is also loaded with powerful antioxidants. This protects your blood cholesterol from oxidation, a benefit that lowers the risk of heart disease.
